Mamavation Monday: Injured List

I've been really proud of myself the past couple of weeks. I was all gung ho about doing the 2 week challenge, C25K and going to the gym. Then, Saturday I was out for a run for my last day of the 2 week challenge and I tore my meniscus :(. So I've been hobbling around trying to get everything ready for Christmas and i'm feeling very stressed!! My knee should heal in 2-3 weeks... if I rest... which I haven't been doing.

What is your biggest achievement of the year?
My biggest achievement of the year would have to be giving birth, that is one heck of a task! I'm really proud of myself and my whole family for adjusting easily to life with a new baby and i'm also proud of myself for losing the baby weight in 6 months! I've been having such a positive experience with the mamavation community, you girls seriously motivate me!

Mamavation Monday: First 5K!

Yesterday I ran in my first 5K ever! It was a holiday family fun run/fitness walk, so the whole family came along! It was tough, I am not a runner. I think I like the idea of running more than I actually like running. I'm hoping if I get out and run more that I will enjoy it as much as I think I do, haha! We finished in 41:55, which i'm not really proud of. We did have my 3 year old who was in and out of the stroller a few times, wanting to run and then getting tired, but i'm not really sure my time would have been much better without him there.

I also completed week 1 of the 2 week challenge this week. This has been my favorite of all the challenges! They really did a great job putting it together. Needless to say, I've been pretty sore all week long, but it's that good kinda sore. I feel great!

Oh and I also joined a gym. This is my first ever gym membership!!

How does your family support your weight loss efforts?
I have already lost close to 25 pounds and have been focusing my efforts more on getting into shape now rather than losing more weight. My family has been very supportive. My husband doing the 5K with me yesterday was huge! My mother and two of my girlfriends who had babies recently really encouraged me to join the gym and my sister is always willing to do any sort of outdoor activity with me! I am so thankful to have such a great support system here and of course I always have my mamavation sista's online!

Food Friday: Sausage & Veggie Simmer

This is a super easy dinner that I throw together when I don't have a ton of time! You can eat it how it is or serve it over whole wheat pasta or brown rice or even in a wrap. Next time I make it i'm going to try adding some shrimp.

1 package chicken sausage, precooked, diced (I usually use spinach & feta)
1 can Italian Style diced tomatoes, no salt added
1 small red onion, diced
1 zucchini, diced
1 yellow squash, diced
1 tbsp olive oil


-Heat olive oil in a large skillet over medium heat.

-Add diced sausage and let it brown for about 5 minutes.
-Add the can of tomatoes (don't drain).
-Add the onion, zucchini & squash, cover and let simmer for 10-15 minutes or until all the vegetables are cooked through and tender.

That's it! So easy & it tastes great! Serve however you would like.

Mamavation Monday: Creating a Better Fit

In the past 10 years I've been to the gym about 3 times. It's not because i'm lazy or hate exercise, it's because I feel awkward. The last time I went to the gym, it was just a huge room with every machine in it and space for weight lifting and floor exercises. Now, if you're like me and aren't a regular at the gym this can be a bit overwhelming. I remember I wanted to try out the elliptical, they were up on a platform, like a stage surrounded by mirrors. I could see the whole gym from up there, everyone effortlessly exercising. About 10 minutes in on the elliptical I was really starting to feel it, but as I looked around everyone else seemed fine. What was wrong with me? Why could everyone else do this so easily and I could not? I felt like a failure.

If there was something that the fitness industry could do to make the gym a better place for someone like me, it would be to split the gym into two rooms. One room would be for beginners, with all the same equipment and trainers there to help you with whatever you need. Everyone else in the room would just be starting out too so you would feel like you fit in. Then, when you're ready you can move into the more advanced room. Maybe you could do so with a buddy you met in the beginner room. I mean, if it was high school and you weren't good at math and they threw you into a class with people who were really good at math you would feel like a failure.

When it comes to holiday shopping, how do you make sure you stick to your budget ?
I usually make an individual budget for every person I need to buy presents for. I shop online and only look at gifts in that price range. Also, before I check out I do a search for discount codes on that website.

Food Friday: Seaside Potato Salad

My husband and I adapted this recipe from one I got in my "Dinner-in-a-Bag Kit" from my local farmer's market last summer. It's a great alternative to the same old mayonnaise-y, gloppy, potato salad!

1 leek, cut in half lengthwise & sliced thin.
2 lbs. waxy potatoes (fingerling or red potatoes) diced
2 peppers cut into large chunks
1/4 cup corn (fresh or frozen)
1/4 cup EVOO
salt & pepper

1/4 cup balsamic vinegar
pinch of salt
pinch of sugar
1 tsp. Old Bay seasoning

-Preheat oven to 400 degrees.

-Slice leeks & place in a large bowl of cool water. Swirl them around with your hand so they separate and any soil will sink to the bottom. Lift the leeks out of the bowl and set on a clean towel to dry.

-On a sheet pan, toss the potatoes with the EVOO until they are evenly coated. Season them with salt & pepper and roast for 15 minutes.

-Add the peppers, leeks and corn and continue roasting for another 10-15 minutes or until the potatoes are golden brown & the peppers are crisp & tender.

-Whisk together the vinegar, salt, sugar & old bay seasoning and toss over the warm potato mixture.

-Serve warm or at room temperature.
