This is a super easy dinner that I throw together when I don't have a ton of time! You can eat it how it is or serve it over whole wheat pasta or brown rice or even in a wrap. Next time I make it i'm going to try adding some shrimp.
1 package chicken sausage, precooked, diced (I usually use spinach & feta)
1 can Italian Style diced tomatoes, no salt added
1 small red onion, diced
1 zucchini, diced
1 yellow squash, diced
1 tbsp olive oil
-Heat olive oil in a large skillet over medium heat.
That's it! So easy & it tastes great! Serve however you would like.
