Mamavation Monday: Sweet Tooth

I've been so proud of myself lately, I can actually see the results of all my hard work. The time I put into exercising and eating right was well worth it. I've just felt great all around. Then, the weirdest thing started happening. People started bringing me food. Comparable to the amount of food we received after my dad passed away. Did something terrible happen? Am I living in some sort of delusional world where everything is fine and dandy while some tragedy is going on around me?

It started off harmless enough, my mother-in-law came over to watch the boys and she brought me some better-than-crack brownies. There weren't a ton and she had cut them into small pieces so I kept them in a fridge and popped on in my mouth when I was craving something sweet.

Then, other people started giving me sweets. Eclairs, shortbread squares, an assortment of home made cookies. The worst part is, they are all delicious. I can't stop eating them. Now, my sister texted me and told me her UC was acting up and she was going to go on a gluten-free diet again. Guess who she's giving all the girl scout cookies she ordered to? Yup. Me.

I really appreciate that people are thinking of me and feel the need to give me sweets, after all, it is well known that I have a huge sweet tooth. But, I would be just as happy with a fruit basket... or nothing at all!

Anyways, I am super excited about the twitter party tonight & I am so excited to find out who the next moms are going to be!!

Spinach & Quinoa Chop Steak


Ingredients:
1 pound lean ground beef (the leanest you can find!)
3/4 cup cooked quinoa
4 tablespoons fresh chopped parsley
4 tablespoons fresh chopped spinach
Olive oil (for pan)
1 onion sliced into rings
1 cup all natural chunky applesauce (I used home made, if you use store bought just make sure there's no high fructose corn syrup.)
1/4 cup balsamic vinegar

Directions:
Chop Steaks:
-Mix the beef, quinoa, parsley & spinach in a large bowl until combined.
-Divide into 4 equal portions and form 1" thick patties.
-Heat oil in a large skillet over medium-high heat.
-Add the patties & cook for about 4 minutes on each side. (Should be brown on the outside & slightly pink in the middle.)
-Transfer to a plate and cover with foil to keep warm.
Topping:
-Re-coat the pan with olive oil and place over medium heat.
-Add onions and sautee for about 5 minutes or until tender.
-Add the applesauce and balsamic vinegar and let simmer for another 5 minutes or until onions are tender.

-Serve steaks topped with the onion mixture!

Mamavation Monday

I'm so excited for the launch of the new mamavation campaign! I can't wait to show my support for the new moms and to follow along.

One of my goals for this year was to run a 5K (or road race) every month of 2012. I'm not starting off well. I hurt my knee pretty badly mid-december and it's still giving me trouble every once in awhile. Also, I can not find a road race for this time of year! So, instead of giving up I decided I will hit up the gym and do a 5K on the elliptical. The elliptical hasn't bothered my knee yet since it is so low-impact. I'm also planning on getting a yoga for runners dvd so I can try to strengthen and stretch the areas that need it!

Who is your biggest inspiration when it comes to healthy lifestyle?
One of my biggest inspirations is my mom. She is always cooking with fresh produce, she hardly eats any processed foods. She is always taking classes at the gym, doing yoga at home & riding her bike!

Mamavation Monday

I've been loving the current 2 week challenge! I'm totally uncoordinated so the whole tae bo portion has been the most challenging for me. I have to say though, this may sound crazy, but I actually feel stronger after just one week. I feel like my core is tighter and my posture is better. Which is huge for me, my posture sucks. My little guy has been trying to do the Fired Up work out with me too, love it!

I was doing pretty good with the nutrition part, I did have some pizza & chicken quesadilla's one night from our local pizza & mexican restaurant, (yes, that exists). I can't wait to finish up this week of the challenge and see my results!

Also, today i'm joining a couple of the other sister's in celebrating MLK jr. day with some good old planks! I have 81 more to go, wish me luck!!

Hopefully I will be able to stay awake and come to mamavation tv tonight. It used to be the highlight of my week, but I've been conking out around 9:30 lately.

What are your latest healthy food discoveries?
I recently tried a breakfast recipe that called for quinoa and I really enjoyed it! The flavor and texture really added a lot to the dish and I'm going to look for more recipes that use it. I would love to try Chia also, I've heard so many great things about it!

Mamavation Monday

Wow, I haven't written a post in a couple weeks! I've been suffering from major winter time lack of motivation. My knee is finally feeling better but I haven't gone out running again yet, I want to make sure I give it enough time before I hit the pavement again. My poor little guy has been sick since pretty much the stroke of midnight on New Year's. He woke up with a croupy cough which turned into a bad cold and then an ear infection. I'm pretty sure he's teething too. So with all of that going on I haven't had a lot of time for me. I got to escape to the gym a few times and do a half an hour on the elliptical.

I'm really excited about starting the 2 week challenge tomorrow, i'm like obsessed with them! My husband is leaving on a business trip on Tuesday so it will give me something to take my mind off of him being gone.

I'm super excited, I get to go into NYC twice the following week! I received some tickets to Live! with Kelly and my sister invited me to her company party which is a few days later. Plus, my husband won some money at the casino when he went for a friends birthday so I get to go pick out new outfits to wear to the city! Speaking of, does any one else have a hard time buying things for themselves? Every time I have a little extra money to spend on myself, I come back from the store with stuff for my boys!!

What do you find most challenging in skin care?
The thing I find the most challenging about skin care, is my skin! Sometimes it's dry, sometimes it's oily & occasionally it's just right! I never know what I should put on it and then I have to be careful because my skin is super sensitive and some products will make me break out or get super itchy. It's a struggle!
