Mamavation Monday: It's my birthday!

Today I am 27, I had an awesome day at the casino yesterday with my husband, my sister and my brother-in-law. I had planned on celebrating today by hooking up the bike trailer to my bike and taking a ride with the baby, but the bike shop is closed on Mondays and I don't have a helmet for him. So maybe I'll celebrate with a nice walk! I'm so happy to be feeling better, the flu I had last week really knocked me on my butt and I wasn't very active at all. Now all I have is spring fever! I can't wait to get outside and do stuff! Have a great week and don't forget to smile :)

What steps have you made so far this year to improve your quality of life?
I have been buying more organic foods and I have been eliminating food dyes and high fructose corn syrup from our diets.

Mamavation Monday: A whirlwind week!

So this week has been a series of ups and downs. I had some struggles with the 2 week challenge. I pulled a weird muscle in my leg on the first day (either from the workout or the "homework"!) It was still really sore on day 3 when it was time for legs again so I had to skip it and make it up the next day. Luckily, on Saturday I was all caught up before I came down with a hellish flu. I spent most of my weekend extremely nauseous and with horrible body pain. Today I just feel weak and shaky. I don't think I'm going to attempt the workout for today.

It's really hard to be sick when you breastfeed. Luckily, I had a bottle in the freezer (which is really rare) so my husband took the boys to his mother's house for the day yesterday and I was able to get some good rest!

My husband got his favorite job ever back this week. He was laid off when I was about 4 months pregnant and has been missing it ever since. He's able to do both the new job and his current job which is great too! Also, I got rid of all my outstanding debt, which is a huge relief. It feels like a giant weight has been lifted. It's funny how I let it stress me out for so long. My husband pulled up my credit report and called the collector that was having a negative effect on my score. It was for $246. That was it. And, one more good thing that happened this week - I got my mother-in-law to kick her diet soda habit!

I'm almost positive I had a weight loss this week with all the time I spent being sick but, i'm still sick and don't feel like weighing myself!

Creamy Potato, Leek & Pepper Soup


Ingredients:

Olive oil
2 leeks, cut down the middle lengthwise, then sliced thin
2 mini bell peppers, seeded and chopped
1 clove garlic, minced
2 cups low sodium chicken broth
2 cups water
4 medium-sized russet potatoes
1/2 cup half and half
1/2 cup plain greek yogurt
2 teaspoons sea salt

Directions:

- Preheat oven to 400°. Toss peppers with olive oil and spread out on a baking sheet. Cook for 15 minutes.
- Meanwhile, heat oil in a large pot over medium heat. Add leeks and cook until tender, stirring often. About 5 minutes.
- Add garlic and cook for another 2 minutes.
- Increase the heat to high and add the potatoes, chicken broth and water. Cover the pot and cook until the potatoes are tender, about 10-15 minutes.
- Add half and half, greek yogurt & salt to the pot, stir and blend until creamy. I used an immersion blender but you could use a regular blender and blend it in batches.
- After the potato mixture is blended, add the peppers and blend coarsely.

* There were like 10 different things I thought would be great garnishes for this, feta crumbles, shredded cheddar, shredded squash, avocado, bacon crumbles, scallions... what would you garnish this with?

Mamavation Monday: Short & Sweet

I haven't really been weighing myself a lot lately, so when I stepped on the scale on Friday I was so excited to see that I had lost 3 lbs.!!

I think I say this every week but, I really need to start planning our meals better. I need to stop planning to plan them and actually plan them. Although the store is close by, at most times I have 3 little kids in the house and running out for a few ingredients for dinner is not always an option. We ended up eating pizza twice this week, which is delicious but not so nutritious!

I can't wait for the 2 week challenge tomorrow!

What is your favorite way to relax?
My favorite way to relax is in the morning, I get the boys situated and then I sit down with my cup of coffee and my computer. I try to ignore everyone while I do this and just use the time for myself. Sometimes I wish that cup of coffee would last forever!

Mamavation Monday: Heart Healthy

What food do you think is good for your heart?

Two foods that I have recently added into my diet are quinoa & chia seeds. I have heard that both of these are really good for your heart.

Heart health is super important to me, my dad died of a massive heart attack when he was only 53 years old. I am constantly worrying about my husband's health because of this. It's not even like he's really unhealthy but I don't ever want my boys to go through losing their father over something that was easily preventable.

I've been doing a lot of research about food and what some of the ingredients are that are listed in our food. I've cut artificial dyes and HFCS out of my families diet. I also came across this video on justlabelit.org and learned about how our food is modified. I signed the petition to have the FDA start labeling food that's been genetically modified and I would love if you could watch the video and do the same!

I've actually really enjoyed doing research and learning about food and nutrients, so the other day when my husband suggested that I should take some online classes, I immediately thought about pursuing a degree in dietetics. It's so hard to find online classes that aren't a scam though!!

I'm really looking forward to the next 2 week challenge. I've been stuck in a lazy rut and need a kick in the butt!
